Balsamic Pork

I'm not going to lie to you, peeps, but I haven't been all that inspired to cook lately.  Between school, work, and starting my own business I'm pooped, and cooking is the last thing on my mind.


This recipe is easy and quite tasty, and at only 137 calories per serving, it fits the weeknight diet bill!


Saute four pork loin chops (seasoned with thyme, salt, and pepper) and 10 cloves of garlic (peeled) in one teaspoon of olive oil until browned on both sides, then set the pork chops aside and cover them to keep them warm.


Add 1/4 cup balsamic vinegar, 2 tablespoons of water, and 2 tablespoons of spicy brown mustard to the pan, with the garlic cloves.  Bring just to a boil and simmer for 1 to 2 minutes, until the sauce thickens.


It doesn't get much easier than that!  I like to serve this with garlic bread (I can't EVER get enough garlic) and a small Caesar salad.

With the promise of 77 degree temperatures tomorrow, my mind is back on open toes and high wedges.
