Quickie Friday and Variations on a Theme: Festive Frittata

I am not ashamed to admit that frittatas are my fall-back dish when I have very little in the house, in terms of groceries.  I used more south-of-the-border flavors this time around, and it did not disappoint.


2 eggs plus 6 egg whites
olive oil
one small white onion, diced
one clove garlic, minced
one half yellow pepper, diced
cumin, white pepper, salt, cayenne pepper (to taste)
Mexican cheese, shredded (or other cheese of your choosing)
one avocado, sliced

Preheat the oven to 350 degrees.  Beat the eggs together and set aside.  Saute the onion, garlic, and yellow pepper over medium heat until softened, about 3 minutes, then add the seasonings.  Saute for an additional minute, then add the eggs.  Stir gently until the eggs start to set, 3-5 minutes, then top with your cheese and pop in the oven for about 20 minutes.  Pull the whole thing out of the oven, top with avocado, slice like a big delicious egg pie and enjoy!!!

While I like to try trends on my feet (why not!) I don't like to spend a lot of money.  The flatform trend that is all over the spring collections isn't my cup of tea.


These wedges, however, are flatform adjacent while still having an actual heel, and therefore worth a try.  Have you tried flatforms?  Love them or leave them?  Tell us in the comments!!!

Quickie Friday: Baked Eggs

In an effort to help the F start his day out on the right foot (and not eating leftover flan for breakfast . . . oy) I baked some eggs.


And wouldn't you know it, cracking a dozen eggs into a muffin pan and baking them at 350 for about 15 minutes yielded some great results.






Let it be known, first, that one should generously grease said muffin tin prior to cracking, so the baked eggs slide out with ease.  Let it also be known that it is quite easy to fashion an at-home McMuffin, of sorts, with a container filled with pre-baked eggs.

Happy F, Happy Ash.  (Pretty sure that is NOT how that saying is supposed to go, but since we aren't getting married until next year, I can't pull the "Happy Wife, Happy Life" card quite yet.)

I can, however, continue to play the "but I wanna be 5'9" like Cindy Crawford" card all over town.


These cheap fixes would put me at a solid 6'1/2" . . . I will take it.

Fabulous Frittata

I've often lamented that it is difficult to cook when one finds oneself standing in a kitchen with few ingredients and a miniscule desire to cook.  Luckily, frittatas exist for just such an occasion.


Did I have green pepper, bacon, and onions?  Yep.


Did I have eggs and tomato basil feta cheese, and a little garlic?  Sure did.


And did I also have a pan, a little olive oil, and a 350 degree oven in which to cook this quick, easy, and blissfully healthy meal?  Damn right I did.  It doesn't get much better than that, peeps.

These are better than a frittata.
